The second in the Past, Present and Future series, celebrating Billy Walker’s 50 years in the whisky industry. This bottling represents Billy’s fascination with wood types and seeking unique maturation profiles. A 16 year old Glenallachie, matured in both PX and Oloroso sherry casks before a second maturation in rare virgin Japanese Mizunara oak. Mizunara is rarely used due to its unwieldly shapes and 200 year growth cycle. Imparting notes of toasted nuts, stem ginger, grilled banana and coconut shavings, this is a unique Glenallachie profile unlikely to be repeated.

Nose: Bursting with dark chocolate, heather honey and grilled almonds, with hints of sandalwood, ginger, orange zest, caramelised pecans and coconut shavings.

Palate: Waves of heather honey, cinnamon and crystalised ginger, followed by demerara sugar, dried dark berries, hazelnuts and fig syrup.

Finish: Finishes very long.
