Clairin Sonson is a product of the Sonson Pierre Gilles distillery, located in Cabaret near the capital Port-au-Prince. Clairin is made here from sugar cane of the Madame Meuze variety, which gives the distillate floral and slightly mineral notes. Sugar cane syrup is used for production, and distillation takes place in stills.
